Ingredients (Makes about 8 egg rolls)

  • 1 small green bell pepper, finely diced
  • 1 cup mushrooms, finely chopped (optional)
  • 1–1½ cups shredded provolone or mozzarella cheese
  • 1–2 tsp Worcestershire sauce
  • 1 tbsp olive oil

For Assembly:

  • 8–10 egg roll wrappers
  • 1 egg, beaten (for sealing)
  • Vegetable oil, for frying

Optional Dipping Sauce:

  • Spicy mayo, ketchup, or cheese sauce

Instructions

Step 1: Cook the Filling

  1. Heat olive oil in a skillet over medium-high heat.
  2. Add onions, bell peppers, and mushrooms; sauté 3–4 minutes until soft.
  3. Add the beef, season with salt, pepper, and garlic powder, and cook until browned.
  4. Stir in Worcestershire sauce and remove from heat.
  5. Let the mixture cool slightly, then mix in the shredded cheese.

Step 2: Assemble the Egg Rolls

  1. Lay an egg roll wrapper on a clean surface in a diamond shape.
  2. Place about 2–3 tablespoons of the filling near the bottom corner.
  3. Fold the bottom corner over the filling, then fold in the sides.
  4. Roll tightly toward the top corner and seal the edge with a dab of beaten egg.
  5. Repeat with remaining wrappers and filling.

Step 3: Fry the Egg Rolls

  1. Heat about 2 inches of vegetable oil in a deep skillet or pot to 350°F (175°C).
  2. Fry egg rolls in batches for 2–3 minutes per side, until golden brown and crispy.
  3. Drain on paper towels.

Step 4: Serve

  • Serve warm with your favorite dipping sauce, like spicy mayo, ranch, or cheese sauce.

Tips & Variations

  • For a lighter version, bake at 425°F (220°C) for 15–20 minutes, turning halfway.
  • Add pickled jalapeños for a spicy kick.
  • Use a mix of provolone and cheddar for extra cheesy goodness.
