Here’s the super easy, OG Rotel Dip—3 ingredients, zero stress.
Classic Rotel Dip (Queso)
Ingredients
- 1 lb Velveeta cheese, cubed
- 1 can (10 oz) Rotel tomatoes & green chilies (don’t drain)
- 1 lb ground beef (optional but very popular)
Instructions
- Brown the beef
Cook ground beef in a skillet over medium heat until fully browned. Drain excess grease. - Melt the cheese
Add Velveeta cubes and the can of Rotel to the skillet with the beef. - Stir & melt
Lower heat and stir until everything is melted and smooth. - Serve hot
Transfer to a bowl or slow cooker on warm.
How to Serve
- Tortilla chips (obviously 🫡)
- Fritos scoops
- Soft pretzels
- Over fries, nachos, or baked potatoes
Popular Variations
- Spicy: Use Hot Rotel + add jalapeños
