Ingredients

  • ¼ cup shredded cheese (cheddar, Monterey Jack, or pepper jack)
  • 1 tbsp butter (optional)

  • Green onions or chives
  • Bacon bits
  • Avocado slices
  • Fresh parsley
  • Drizzle of hot sauce or garlic butter

Instructions

1. Bake the sweet potatoes

  • Preheat oven to 400°F (205°C).
  • Scrub sweet potatoes, poke holes with a fork.
  • Rub lightly with olive oil, salt, and pepper.
  • Bake 45–55 minutes until fork-tender.
    (Shortcut: microwave 6–8 minutes, flipping halfway.)

2. Cook the shrimp

  • Toss shrimp with olive oil, garlic powder, paprika, Cajun seasoning, salt & pepper.
  • Heat a skillet over medium-high heat.
  • Cook shrimp 1–2 minutes per side until pink and juicy.
  • Remove from heat.

3. Load ’em up

  • Slice sweet potatoes down the center and fluff the insides with a fork.
  • Add butter if using, then a spoon of sour cream or yogurt.
  • Sprinkle cheese so it melts into the potato.
  • Top generously with shrimp.

4. Finish strong
