Slow Cooker Family-Style Beef Stroganoff

Ingredients

For the stroganoff

  • 2½–3 lb beef chuck or stew meat, cut into bite-size pieces
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 12 oz mushrooms, sliced (button or cremini work great)
  • 3 cups beef broth
  • 2 tbsp Worcestershire sauce
  • 1 tbsp Dijon mustard
  • 1 tsp paprika
  • 1 tsp salt (adjust to taste)
  • ½ tsp black pepper
  • 2 tbsp flour or cornstarch (for thickening)

To finish

  • 1½ cups sour cream (full-fat = best texture)
  • 2 tbsp butter (optional but recommended 😏)
  • Fresh parsley, chopped (optional)

For serving

  • Egg noodles, mashed potatoes, or rice

Instructions

  1. Layer the slow cooker
    Add beef, onion, garlic, mushrooms, salt, pepper, paprika, and flour (or cornstarch). Toss lightly to coat.
  2. Add liquids
    Pour in beef broth, Worcestershire sauce, and Dijon mustard. Stir gently.
  3. Cook low and slow
    • LOW: 7–8 hours
    • HIGH: 3–4 hours
      The beef should be very tender.
  4. Finish with creaminess
    About 20–30 minutes before serving, stir in:

    • Sour cream
    • Butter (if using)
      Let it heat through gently. Do not boil after adding sour cream or it may curdle.
  5. Taste and adjust
    Add more salt, pepper, or a splash of broth if needed.
  6. Serve family-style
    Spoon generously over egg noodles or mashed potatoes. Sprinkle parsley on top if you’re feeling fancy.

Tips for Extra-Good Stroganoff

  • Sear the beef first (optional): Browning it in a skillet adds deeper flavor.
  • Too thin? Mix 1 tbsp cornstarch with 2 tbsp water, stir in, and cook 10 more minutes.
  • Too thick? Add warm broth a little at a time.
  • No mushrooms? Totally fine—still delicious.

Make-It-Your-Way Variations

  • Creamier: Add 2–3 oz cream cheese with the sour cream
  • Extra savory: Add ½ tsp soy sauce
  • Lighter: Use Greek yogurt instead of sour cream (stir in off heat)
  • Extra cozy: Serve with buttered egg noodles and crusty bread
