Slow Cooker Pork Chops

Here’s a simple and delicious slow cooker pork chops recipe that’s juicy, flavorful, and almost foolproof:


Ingredients (Serves 4)

  • 4 bone-in or boneless pork chops (about 1-inch thick)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika (optional for a smoky flavor)
  • 1 tablespoon olive oil (for searing, optional but recommended)
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme or rosemary
  • 1 tablespoon cornstarch + 2 tablespoons water (optional, for thickening gravy)

Instructions

  1. Season the pork chops
    Mix salt, pepper, garlic powder, and paprika. Rub the mixture on both sides of the pork chops.
  2. Optional: Sear the pork chops
    Heat olive oil in a skillet over medium-high heat. Sear pork chops 2–3 minutes per side until lightly browned. This adds extra flavor but is not required.
  3. Prepare the slow cooker
    Place sliced onions and minced garlic at the bottom of the slow cooker. Layer pork chops on top.
  4. Add liquids and herbs
    Pour chicken broth and Worcestershire sauce over the pork chops. Sprinkle thyme or rosemary on top.
  5. Cook
    Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until pork chops are tender (internal temp ~145°F/63°C).
  6. Optional: Thicken gravy
    Remove pork chops and whisk 1 tablespoon cornstarch into 2 tablespoons water. Stir into the slow cooker liquid and cook on HIGH for 10–15 minutes until thickened.
  7. Serve
    Pour gravy over the pork chops and serve with mashed potatoes, rice, or vegetables.

  • Use bone-in chops if possible—they stay juicier.
  • Avoid overcooking; slow cookers can make lean chops dry if cooked too long.
  • Add sliced mushrooms or apples for extra flavor.
