Ingredients (Serves 4–6)

For the fish:

Instructions

  1. Prep the fish
    • Rinse fish fillets and pat dry with paper towels.
    • In a shallow dish, mix buttermilk and hot sauce. Add fish and let it soak for 15–30 minutes in the fridge. This tenderizes the fish and adds flavor.
  2. Prepare the coating
    • In a large shallow bowl or plate, combine cornmeal, flour, paprika, garlic powder, onion powder, cayenne, salt, and pepper. Mix well.
  3. Heat the oil
    • Pour oil into a deep skillet or cast-iron pan to about 1–2 inches deep.
    • Heat over medium-high heat until the oil reaches 350°F (175°C) or until a pinch of the coating sizzles immediately when dropped in.
  4. Coat the fish
    • Remove fillets from buttermilk, letting excess drip off.
    • Dredge each fillet in the cornmeal mixture, pressing lightly to coat evenly.
  5. Fry the fish
    • Carefully place fillets in hot oil, frying in batches if necessary to avoid overcrowding.
    • Cook 3–5 minutes per side, depending on thickness, until golden brown and cooked through (internal temperature ~145°F / 63°C).
    • Remove and drain on paper towels.
  6. Serve
    • Serve immediately with lemon wedges and your favorite Southern sides.
