Southern-Style Potatoes
(Skillet-fried, old-school)
Ingredients
- 4–5 potatoes (russet or Yukon gold)
- 1 small onion, sliced
- 2–3 tbsp bacon grease or butter/oil
- Salt & black pepper
- Paprika (optional but very Southern)
- Garlic powder (optional)
How to make them
- Peel or don’t — your call. Dice potatoes into small cubes.
- Rinse briefly, then pat very dry (this matters).
- Heat fat in a heavy skillet (cast iron if you have one).
- Add potatoes in a single layer. Don’t stir yet.
- Let them brown on medium heat, then flip.
- Add onions once potatoes start to soften.
- Season generously. Cook until crispy and golden.
Southern secrets
- Don’t crowd the pan or they steam.
- Bacon grease = flavor + crisp.
- Finish with a lid for 2–3 minutes if you want them extra tender inside.
