Ingredients (serves 4)

  • 8 lamb chops (rib or loin, ~1–1½ inches thick)
  • 3 tbsp olive oil
  • 3 cloves garlic, minced
  • 1½ tsp ground cumin
  • 1½ tsp ground coriander
  • 1 tsp smoked paprika
  • ½ tsp ground cinnamon
  • ½ tsp chili flakes (adjust to taste)
  • 1 tsp kosher salt
  • ½ tsp freshly ground black pepper
  • 1 tbsp fresh rosemary or thyme, finely chopped
  • Zest of 1 lemon
  • 1 tbsp lemon juice

Marinade

In a bowl, mix olive oil, garlic, spices, salt, pepper, herbs, lemon zest, and lemon juice.

Coat lamb chops thoroughly, cover, and marinate:

  • Minimum: 30 minutes
  • Best: 2–4 hours (up to overnight in the fridge)

Bring chops to room temperature before grilling.

Grilling Instructions

  1. Preheat grill to medium-high heat (about 450°F / 230°C).
  2. Lightly oil the grates.
  3. Grill lamb chops:
    • Medium-rare: 3–4 minutes per side
    • Medium: 4–5 minutes per side
  4. Look for a good char without burning the spices.
  5. Rest chops for 5 minutes before serving.

Internal Temperature Guide

  • Medium-rare: 130–135°F (54–57°C)
  • Medium: 140–145°F (60–63°C)
