Teriyaki Chicken and Broccoli

Teriyaki Chicken and broccoli sounds like a delicious and healthy combo! Here’s a simple recipe to make it at home:

Ingredients:

  • 2 boneless, skinless chicken breasts (or thighs, if you prefer)
  • 1 large head of broccoli (or 2-3 cups of florets)
  • 1/4 cup soy sauce
  • 2 tbsp honey or brown sugar
  • 1 tbsp rice vinegar or apple cider vinegar
  • 2 tbsp sesame oil (or vegetable oil)
  • 1 tbsp grated fresh ginger (or 1 tsp ground ginger)
  • 2 cloves garlic, minced
  • 1 tbsp cornstarch (optional, for thickening the sauce)
  • 1/2 cup water (or chicken broth)
  • Sesame seeds for garnish (optional)
  • Green onions for garnish (optional)

Instructions:

  1. Cook the Chicken:
    • Slice the chicken into thin strips or bite-sized pieces.
    • Heat a large pan or skillet over medium-high heat and add 1 tbsp sesame oil.
    • Cook the chicken until browned and cooked through (about 5-7 minutes). Set it aside.
  2. Make the Teriyaki Sauce:
    • In the same pan, add the garlic and ginger and sauté for about 30 seconds until fragrant.
    • Add soy sauce, honey (or brown sugar), and vinegar to the pan, stirring to combine.
    • To thicken the sauce, mix cornstarch with water or chicken broth and add it to the pan. Stir until the sauce thickens (around 2-3 minutes).
  3. Cook the Broccoli:
    • Steam or blanch the broccoli florets for 3-4 minutes until tender but still bright green. You can also sauté the broccoli in a separate pan with a little sesame oil.
  4. Combine:
    • Add the cooked chicken back into the pan with the teriyaki sauce and toss to coat.
    • Serve the chicken and sauce over the broccoli. Garnish with sesame seeds and chopped green onions if desired.

Serve it with steamed rice, and you’ve got a quick, flavorful meal!
